After making some tasty + healthy bagels, I decided to whip up some dairy free “cream cheese”. This recipe would be useful for literally anyone. But, if you are someone who avoids dairy, prefers to eat plant based, or are following a low carb lifestyle, this checks all the boxes.
This recipe is incredibly easy and uses fresh herbs for an incredibly fresh flavor, and cashews for it’s creaminess. My favorite recipes are the type you just blend all ingredients in a blender or food processor and you’re done. 🙂 Although this one was created specifically for these bagels, it would also make an excellent seed cracker or veggie dip. I also plan to use it to keep it paleo while making stuffed mushrooms later this week. (Edit: I did it, it was heavenly, you must. try. this. at. home)
I’m excited to keep on eating my beloved lox bagels without any dairy or grains thrown into the mix. My eleven month old son is in love with lox and salmon, and now he never has to eat it alone (hah, as if he did…) but life wasn’t the same without bagels and cream cheese.
