I have to admit, I was not sure what the outcome would be on the taste and texture of “black bean brownies”. But, I knew I had to give them a fair chance. I love to try new recipes (and also sometimes fail while attempting to use mostly gluten and dairy free ingredients.) I love to eat well, I love to bake as often as possible, and I really really like black beans too. 🙂
Despite my initial worry, this recipe was a complete success in my book. We will be making these on repeat forever. Between the black beans and flaxseed, they are full of fiber, bursting with rich chocolatey flavor, and no one would believe that are good for you. We might have accidentally eaten a lot of them. And speaking of accidents, they are also unintentionally vegan! I love when a recipe can be mastered while remaining 100% plant based.
I consider these treats “ugly delicious.” Something we would actually eat regularly, not too much effort, 100% enjoyable, and comforting to the fullest.
My favorite part of this recipe (BY FAR) is the frosting! I had no idea you could make frosting with just coconut cream and chocolate. To be honest, I have only made homemade frosting one time. In America, you just buy frosting pre-made, so when I realized I couldn’t find it in Tunisia, I made butteream frosting from scratch (and could not believe the amount of butter and confectionary sugar needed.) I knew it wouldn’t be something I could enjoy regularly.
This chocolate frosting is so much better! You can choose which type chocolate you’d like to melt. We used vegan dark chocolate chips, which are also refined sugar free. Regular milk chocolate chips or any chocolate melts would work fine, also!
The longer this frosting stays chilled before being whipped into frosting, the better. I recommend making the frosting, storing in the fridge overnight before turning it into frosting. After baking and frosting ours, I did kept ours out for a few hours in our warm home to see if the frosting would melt, and thankfully it did not. After testing, I am now storing my frosted brownies in the fridge in between the time I am snacking on them for good measure 😉
