Homemade rose petal candies
Adapted from Leite’s CulinaraPlus, crafting while making a zero waste treat? You know that’s my jam. Just like when we made these fruit leathers,but better.. because roses!

It was a Sunday well spent. Our lockdown had been lifted and we took a walk to our local market. We stocked up our produce and stopped by the bakery and my favorite florist. To my delight, they had an abundance of loose rose petals. I had been wanting to make a few rose petal recipes, including these homemade rose petal candies. It was simply meant to be.
I mean look at those colors! The thing I’m going to miss most about Tunisia is my florist. I love fresh flowers, even when they’re just petals. I have so many more ideas if they have more on my next trip.
It’s important that your rose petals are not sprayed with pesticides, so make sure your petals are from your own garden or a trusted organic source | florist.
ingredients.
All you need is some fresh rose petals.
egg whites or pasteurized egg white powder
sugar or rose sugar
tools
a fresh paintbrush for painting egg whites onto petals
a cooling rack for your petals to dry
This recipe contains raw egg, so please do not serve to anyone immunocompromised, pregnant, or infants. If you are still concerned about using raw egg, use pasteurized egg white powder.
You can use regular sugar, or try this homemade rose sugar. Either way, it’s a beautiful garnish!
how to make Homemade rose petal candies
1.Carefully pluck the individual petals from the rose bloom.
2. VERY Gently mist your rose petals to clean them, because careful not to bruise them. I like to mist them with some water, place them on a towel, and gently place a paper towel on top of them for absorption.
3. Place a wire cooling rack on a baking sheet. Crack the egg white into a small bowl and whisk it with a fork. Dump the superfine sugar into a shallow bowl or onto a plate.
4. Gently paint a rose petal with the egg white using a new soft bristle paintbrush or instead simply dip the petal in the egg white, turning to coat both sides and allowing any extra to drop off, and then place the petal in the bowl of superfine sugar, turning to coat both sides and sprinkling on extra, if necessary, so the petals are completely coated with sugar.
5. Space the candied rose petals apart on a wire cooling rack and leave until dry and hardened.
6. Use the candied rose petals quickly, within a day or two.
Enjoy as a garnish on your favorite cakes and cupcakes. Especially for valentines day coming up!
