Have you ever tried macadamia butter? It’s one that’s not as common as other nut butters (such as peanut or almond) or often readily found in your pantry, but it’s 100% worth investing in. Macadmias are notorious for their health benefits; which includes their high vitamin concentration (vitamin A, B, iron and folate) and are loaded with healthy fats and antioxidants.
You should have seen my husband’s face when he saw me bring home this 4 lbs jar of raw macadmia butter “You’ll never finish that!” He insisted. These macadamia cups were the last of my butter, and now I have more on their way 🙂
Because macadamias are most commonly found in cookies than used as a health food, I wanted to create them into something sweet, nutritious and incredibly delicious. Making “cups” is as easy as pouring your ingredients into a cupcake liner, and allowing them to cool. We use Reusable Silicone Baking Cups. They come in handy for all of my cupcake, muffin, and nut-cup making needs.
I decided to take these up a notch with raw cocoa nibs. We use these: Terrasoul Superfoods Raw Organic Criollo Cacao Nibs. If you have never tried them, they have an intense chocolate flavor, crunch, but in superfood form, without any sugar or unnecessary ingredients. They are absolutely wonderful for you, high in antioxidants and fiber.
These macadamia cups are sweetened with raw natural honey, and so good that you will need to buy 4 lbs of macadamia butter to satisfy your cravings for them.
