
I have to be totally honest here, pb+j sandwhiches are not my thing. it’s not that I dislike them, but it’s also not the type of meal or snack I ever want or crave. With that said, my kids really like them. My daughter asks for them regularly, and even our baby has shown signs of enjoying the taste when he’s tried them.
Friday evening, I found myself wanting to bake, but without most of the necessary ingredients I usually use to do so. No coconut oil, no maple syrup, but plenty of flour, honey, and almond butter. This cookie recipe with minimal ingredients held up very nicely, but they were so delicious! Even I truly enjoyed their soft texture and sweet complimentary raspberry jam alongisde the almond butter cookie. These > pb+j!
FLOUR:
For the flour in this recipe, I used King Arthur’s Paleo Flour. I can not quite express how excited I am that this stuff now exists! It is a 1-1 substitute for all purpose flour, and a mixof cassava, almond, and coconut flour. It is gluten free with 4g of protein and 4g of fiber per serving. If you do not have any paleo flour, you can use all purpose flour, or another 1:1 gluten free substitute, however neither of those are considered paleo.
HONEY
I always use locally sourced raw honey in our recipes. Raw honey is ideal because processed honey does not have nutritional benefits removed through a heating and filtration process. It is nature’s more pure, unpasterurized sweetner.
ALMOND BUTTER
I used a homemade, smooth + creamy almond butter for our cookies, but can recommend this brand if you would prefer to buy yours! Their almond butter is organic with no additives, sugars, fillers or preservatives, which makes it extremely healthy, but also gives it the right texture needed for this cookie (smooth) All of their facilities are gluten and peanut-free. I love this stuff!
CHAI SEED JAM
The jam was a super easy chia jam recipe, which you will make over and over and over again! I have never made “regular” jam, due to the amount of sugar needed, and overall amount of work necessary to prepare and properly can and preserve it. Chia seeds are high in omega-3s, antioxidants, and have fiber, iron and calcium! Raspberries have a low gylcemic index, making this jam a wonderful alternative to regular jams or jellies, and the berry is high in fiber, vitamins, minerals and antioxidants.
