I needed to stock the house up really quickly as we would be in full confinement for a few days. Honestly, is there any better feeling when your house has everything you need while going into confinement?
We had our produce box delivered early, I stopped at the bakery for fresh baguette and sandwich bread, and with produce overflowing, I felt so abundant and ready to take on the next few days or weeks.
When I know I will be juggling distance learning, taking care of my toddler, all meals and household responsibilities while my husband is at work, I get to prepping!

This sandwich is healthy, filling, full of color and nutrients to keep us energized and fueled for the day. I have all of our vegetables sliced and ready to go, stored in glass. You can read more here about my favorite storage and food preservation tips.
All of the ingredients are stored pre sliced, and there’s no cooking involved. So it comes together in a breeze!
One of our goals for this new year was to incorporate even more plants into our diet, to reduce our impact on the environment. It’s really so easy since our family loves fruit and veggies.
I love to serve this sandwich with some sweet potato fries or oven baked potato peel chips! Ultimate rainbow veggie sandwich recipe ingredients:
1/4 cup roasted peppers
1/2 Thinly sliced carrot
Few sprigs of Arugula
1/3 Sliced cucumber
1 tablespoon Pickled red cabbage
1/2 small Red onion
Basil
Bread or wrap of choice
How to prepare:
Spread your basil over your bread slices.
Layer your ingredients. I like to go by color of the rainbow, but there is no right or wrong!
