Ingredients

  • Pie dough –Make your favorite from scratch or use store bought.
  • 3 ripe pears
  • 1 tablespoon freshly grated ginger
  • cup crumbled goat cheese or cheese of choice
  • 1 tablespoon sparkling sugar
  • 1 egg white
  • 1 tablespoon salted butter melted
  • optional: crushed pistachios and honey for drizzling on top

Instructions

  • Start by rolling out your pie dough into a 12” circle
Crumble your goat cheese around the pie crust, leaving a 2 inch border
  • Slice the pears and remove the core and seeds
Arrange the pears into the center of the dough however you'd like
  • Fold the edges of the pie dough over the filling
  • Next, melt your butter and grate your ginger, adding your ginger to the melted butter and stirring until well incorporated
  • Optionally, add some crushed pistachios, walnuts or pecans on top for a little crunch
  • Once butter is melted, brush it on top of the pear sand pie dough
  • Finally, brush the edges of the pie dough with egg wash and sprinkle with sparkling sugar
  • Finish by baking the galette at 350°F for 45 minutes, until the filling is bubbling and the crust is golden-brown.

Notes

Serve warm, garnish with a fresh rosemary sprig and drizzle with honey
