Candied herbs for an elegant garnish

Ingredients

  • One large bundle of fresh herbs: rosemary thyme, varieties of mint, sage
  • 1 egg white
  • ½ cup granulated sugar

Instructions


  • 3. Place a wire cooling rack on a baking sheet. Crack the egg white into a small bowl and whisk it with a fork. Dump the superfine sugar into a shallow bowl or onto a plate.

    4. Gently paint herbs the egg using a new soft bristle paintbrush or instead simply dip the petal in the egg white, turning to coat both sides and allowing any extra to drop off, and then place the petal in the bowl of sugar, turning to coat both sides and sprinkling on extra, if necessary, so the herbs are completely coated with sugar.

    5. Space the candied herbs apart on a wire cooling rack and leave until dry and hardened.

Notes

Use the candied herbs quickly, within a day oe two.
Does not freeze well.
Enjoy as a garnish on your favorite cakes or cocktails.
