Lavender lemon gin and tonic

This lavender lemon gin and tonic will be your new favorite summer cocktail. This recipe is a gorgeous refreshing highball classic gin cocktail that's crisp, slightly floral, has pronounced citrus notes, and is incredibly well balanced between strong and sweet thanks to the lavender honey syrup.

Ingredients

  • the lavender honey syrup:
  • 1 cup water or lavender water
  • 1 cup sugar
  • ½ cup fresh lavender OR ⅓ cup dried lavender
  • 1 tablespoon honey
  • the cocktail:
  • 2 ounces gin
  • 1 ounce lavender honey simple syrup
  • 1 ounce freshly squeezed lemon juice
  • 4 ounces tonic water

Instructions

For the syrup:

  • In a small saucepan over medium/high heat, heat the water, sugar, and lavender until it comes to a simmer.
    Stir to dissolve the sugar and continue simmering gently for 5 minutes, reduce heat and let simmer on low for an additional 5 minutes.
    Remove from heat and let the liquid cool.
    Lastly, strain into a jar (with an airtight lid)

For the cocktail:

  • Add your gin, lavender syrup, and lemon juice with ice into your cocktail shaker. Shake well. Strain over your glass of choice with ice. Top with tonic water. Add your garnish, and enjoy.

Notes

Serve immediately over ice
Store leftover syrup into a jar with airtight lid for up to one month in your refridgerator.
