Fresh herb blend for turkey or chicken

When you're roasting a bird, the only way to go is fresh with this DIY fresh herb blend! This delightful herb seasoning will have your guests swooning over how perfectly seasoned your bird was. The blend of flavors are truly complementary - once we made this perfect formula for our Thanksgiving turkey last year, I decided I needed to share it with you too!

Ingredients

  • 2 tablespoons finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh sage
  • 1 tablespoon finely chopped fresh thyme
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg

Instructions

  • Finely chop your rosemary, sage, and thyme
  • Grate your fresh nutmeg, alternatively use the same amount of dry nutmeg, but fresh is best
  • Add your fresh herbs and nutmeg in a small bowl, add salt and pepper and mix thourogly.

Notes

Season right on top of the skin, however you'll be basting and inevitably washing some of it away. You'll get the best flavor by rubbing your seasoning under the skin and inside the turkey. This way the seasoning will have direct contact with the meat.
Season the outside of your turkey or chicken with LOTS of butter, salt, pepper, garlic and then add this seasoning blend. Baste the turkey with beer, white wine or it's natural juice every hour. The natural sugars will help caramelize the outside of your turkey, giving it a nice crispy and flavorful skin.
