Watermelon mint rosewater popsicles

Learn how to make watermelon kiwi mint popsicles. So simple to make, have minimal ingredients, and are sure to hydrate and cool you down. Plus, I love how pretty they are! Their slightly pink hue makes my day.

Ingredients

  • ½ regular sized watermelon - seedless or seeds removed or about 3 cups
  • 4 kiwi fruit
  • 1 tablespoon rose water
  • 1 small bundle of fresh mint or 1 tablespoon of dried mint
  • 1 teaspoon honey or more - if desired

Instructions

  • Cut flesh of watermelon into large chunks. Add rosewater, watermelon and honey into a blender and process until smooth. Pour puree into your popsicle mold.
  • Add your popsicle sticks into the mold. Be sure to leave room for green mixture. Let freeze for one hour before adding green mixture.
  • Peel kiwi and cut into small pieces. Add to a blender along with your mint. Blend to puree until smooth. If needed, strain to remove any large pieces of whole fresh mint. Pour puree into popsicle molds, on top of the watermelon.
  • Freeze until the popsicles are solid, 4 hours or more.

Notes

Feel free to make these popsicles well in advance of the date you need them by! They last up to six months in the freezer.
To remove from the mold with ease, run under hot water for just a few seconds.
