Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1/3 cup dried chamomile flowers or ½ cup if using fresh
  • 2 oz. whiskey choose one that complements the chamomile; a peaty or smoky variety
  • 1 oz. chamomile simple syrup
  • 1 oz. fresh lemon juice
  • 1 oz. honey
  • Ice
  • Optional: Chamomile flowers for garnish

Instructions

  • Make the chamomile syrup. Combine chamomile flowers and water in a saucepan, simmer for 10 minutes, then strain and add equal parts sugar. Stir until dissolved and cool. This is your chamomile simple syrup!
  • In a small saucepan over medium/high heat, heat the water, sugar, and chamomile until it comes to a simmer.
  • Stir to dissolve the sugar and continue simmering gently for 5 minutes, reduce heat and let simmer on low for an additional 5 minutes.
  • Remove from heat, add in your honey, and stir to dissolve.
  • Let the liquid cool. Lastly, strain into a jar (with an airtight lid) to thicken before making cocktail.
  • To craft the cocktail: combine whiskey, syrup, and honey lemon juice in a cocktail shaker filled with ice. Shake vigorously for 15 seconds until chilled and frothy.
  • Strain into a chilled glass. Garnish with a sprinkle of chamomile flowers honey comb stick or a honey lollipop.
