1 tablespoon olive oil 2 tablespoons butter 8 cloves of garlic minced 1 onion diced 2 large carrots chopped 2 celery stalks chopped 1 bell pepper 2 medium sweet potatoes 1 tablespoon fresh grated ginger 6 cups healing bone broth 1 teaspoon freshly chopped herbs ½ teaspoon salt ½ teaspoon dried oregano ½ teaspoon black pepper
Place a large dutch oven or pot over medium high heat and add in oil. Once oil is hot, add in garlic and ginger, cook for a minute.
Next, add in two tablespoons of butter, onions, carrots, celery, and your bell pepper.
Add salt, pepper, and dried oregano.
Add in your broth and bring soup to a boil.
Add in your sweet potatoes and chicken and fresh herbs.
Add a cover to pot and reduce the temperature to let the soup simmer for twenty minutes to allow the potatoes to soften.
