1/2cup (113 grams) unsalted butterroom temperature
1cup (200 grams)granulated sugar

1/4cup (60 grams)sour creamsub for greek yogurt if needed, room temperature

2cups (240 grams)powdered sugar
2teaspoonspure vanilla extract
2tablespoons (30 ml)milk, plus more if needed

Cookies
Wisk your dry ingredients - flour, salt, baking powder, baking soda, and cornstarch in a large bowl and set aside.
Cream the butter and sugar until fluffy (about 2 minutes) then beat in the egg, and vanilla.
Next, mix the sour cream or greek yogurt until combined, scraping the bowl down as needed.
Add the dry ingredients to the wet and mix on low until combined.
Shape dough into a ball then cover in plastic and chill for an hour.
Preheat oven to 350F.
Roll the dough out to ¼ inch, then use a round circular cookie cutter to cut the cookies; reroll the scraps and cut the remaining cookies.
Transfer cookies to parchment-lined baking sheets and bake at 350F for 10 minutes or until the cookies are just starting to get golden on the bottom. Set aside to cool completely.
While the cookies bake and chill, make your buttercream.
Buttercream
Cream the butter, then mix in the powdered sugar and vanilla. Drizzle in the milk while mixing on low, then increase speed to high and beat until smooth. If using food coloring, mix in a drop at a time until your desired color is reached.
Top the cookies with a generous layer of buttercream and use M&M's to create a daisy shape.
