Daisy Sugar Cookies

Learn to make mouth-watering daisy sugar cookies with daisy decorations in the comfort of your own home! These cookies are similar to the beloved Lofthouse cookies - soft, fluffy, topped with delectable buttercream frosting and a simple M&M decoration.

Lofthouse Cookies are famous grocery store cookies that have a soft texture, sweet pink frosting, and colorful sprinkles or nonpareils. They're similar to soft sugar cookies but with a cake-like consistency. Their texture reminds me of a New York Classic, black and white cookies if you've ever tried those.

I added pink buttercream and pink M&Ms, but you can use any colors your heart desires here! You can buy bags of just yellow m&m, like I did with pink and white, so I didn't have to pick out colors. I got my pink and white M&Ms from a special valentines pack.

Ingredients

  • 2 ¼ (270g) cups all-purpose flour 
  • ½ teaspoon baking powder
  • ¼ tsp baking soda
  • 1 tbsp cornstarch
  • ½ tsp salt
  • ½ cup (113g) unsalted butter room temperature
  • 1 cup (200g) granulated sugar 
  • 1 egg at room temperature
  • ¼ cup (60g) sour cream or Greek yogurt, room temperature 
  • 1 ½ (8 ml) tsp vanilla extract

For the Buttercream

  •  ½ cup (113g)butter room temperature 
  • 2 cups  (240g) powdered sugar
  • 1 tsp (5ml) pure vanilla extract 
  • 2 tbsp (30mL) Milk  plus more if needed
  • Food coloring optional

Decorating:

Instructions

  • Wisk your dry ingredients - flour, salt, baking powder, baking soda, and cornstarch in a large bowl and set aside.
  • Cream the butter and sugar until fluffy (about 2 minutes) then beat in the egg, and vanilla. Next, mix the sour cream or greek yogurt until combined, scraping the bowl down as needed.
  • Add the dry ingredients to the wet and mix on low until combined.
  • Shape dough into a ball then cover in plastic and chill for an hour.
  • Preheat oven to 350F. Roll the dough out to ¼ inch, then use a round circular cookie cutter to cut the cookies; reroll the scraps and cut the remaining cookies. Transfer cookies to parchment-lined baking sheets and bake at 350F for 10 minutes or until the cookies are just starting to get golden on the bottom. Set aside to cool completely.
  • While the cookies bake and chill, make your buttercream.
  • Cream the butter, then mix in the powdered sugar and vanilla. Drizzle in the milk while mixing on low, then increase speed to high and beat until smooth. If using food coloring, mix in a drop at a time until your desired color is reached.
  • Top the cookies with a generous layer of buttercream and use M&M's to create a daisy shape.

Cookies

  • 2 ¼  cups (270g)  all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • ½ cup (113 grams) unsalted butter room temperature
  • 1 cup (200 grams) granulated sugar
  • 1 egg room temperature
  • ¼ cup (60 grams) sour cream sub for greek yogurt if needed, room temperature
  • 1 tablespoon vanilla extract

Buttercream

  • ½ cup (1 stick, 113 grams) butter room temperature 
  • 2 cups (240 grams) powdered sugar
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons (30 ml) milk, plus more if needed
  • 1 drop food coloring, optional, more if desired

  • M&Ms for decorating
