One thing I can always be sure my children will approve of, is mom's homemade popsicles. Here in Oman, there are these scrumptious sorbet pops in the store my kids adore! But, with 6 in a box and a single flavor my kids always argue over, I decided they weren't worth the trouble (or high price tag!) and I'd make something even better at home.

Welcome to my creamy mango sorbet push pops. When I saw the push pop molds, I knew I had to grab them! I love these ones because they come with the base, making preparing them and storing them a breeze!

Ingredients:

  • 4 large mangoes , pitted and peeled
  • 1 cup heavy cream, you can sub coconut cream if desired
  • ½ cup full fat vanilla or mango greek yogurt
  • 1 tablespoon vanilla extract
  • ⅓ cup honey
  • 1 teaspoon salt
  • ⅓ cup granulated sugar - You can use all honey, however, granulated sugar is intentionally added here. Without it, sorbet would be icy and grainy. This is why I always sweeten creamy recipes with it, like our homemade ice creams. For optimal texture.

How to make them:

While it's pretty standard in popsicle recipes to just mix all the ingredients in a blender and pop them into your mold, we want to get the most creamy, flavorful popsicles you can make at home. So first, we very slowly and gently heat and reduce ingredients together in a saucepan. Then we all it to fully cool, blend and add to our molds. You will taste the difference!

  • Cut mango from the pit and remove skins. Slice, size doesn't matter.
  • Place mango, heavy cream, sugar, and vanilla extract into a small saucepan.
  • Heat on the lowest setting possible for 10 minutes, covered to allow the sugar to dissolve.
  • Remove from heat, chill thoroughly, and add your greek yogurt and honey.
  • Move the mixture to a blender and blend until completely creamy and smooth.
  • Pour blended mixture into push pop molds.
  • Move to the freezer and freeze for at least two hours.
