A delicious, plant-based popsicle made from fresh fruit and coconut milk. These three ingredient prickly pear pineapple popsicles help you enjoy the last of summer sunshine and produce to the fullest.

Back home in America, we have ice cream trucks in the summer. Here in Tunisia, we have prickly pears.

 

Although summer is coming to an end (I’m still holding on), it is still prickly pear season. Instead of the nostalgic ice cream truck sound, a merchant walks down our street each day offering “Hindi” and announcing it loudly.

When Payton and Pj hear the familiar voice, they are so excited you would think it was indeed the ice cream man. They run outside with a large bowl. He carries the prickly pears on a cart with wheels, and using a knife and bucket of water, he peels the prickly pears, leaving just the fruit. We can’t help but sit together and enjoy a few immediately.

They are incredibly juicy and refreshing on their own, but since we buy so many - I enjoy making ice cream (or sorbet) or popsicles out of them. I mixed them with pineapple and just a touch of coconut cream for a rich, creamy popsicle. Just three ingredients. The fruits have such a beautiful flavor together. This type of recipe hardly requires me to write it out, but I’d like to any as a tribute to our last summer in Tunisia.

Simple ingredients in this popsicle recipe

All we used in this popsicle recipe is fresh prickly pear, pineapple, and a little coconut milk. The pineapple flavor is dominant and they have a nice, creamy consistency. All you need is some produce, a blender, and a popsicle mold to make these happen. We love our stainless steel popsicle mold and use it regularly.

If you haven't heard of or tried prickly pear, you're in for a treat. Prickly pear is fruit belonging to the cactus family that possesses a wide range of benefits. Please note the skin is indeed prickly. Take caution when preparing the fruit. You can use this information on how to prepare them if you have whole prickly pear fruit with the skin on and in tact.

Ingredients

  • 6 prickly pears peeled and cleaned
  • ½ pineapple
  • ½ cup coconut milk

Instructions

  • Add all ingredients to blender
  • Blend until mixed completely
  • Pour into popsicle molds (makes 6)
  • Freeze for at least two hours before enjoying
