Lilac sugar cubes are my way of capturing the fragrance of the season in tiny pressed forms, ready to melt into tea or coffee like a whisper of spring you can taste. Perfect for Mother’s Day, tea parties, lilac lemonade or a lilac latte!

Ingredients:

The best part about this recipe is that it’s simple. All you really need is water and sugar and lilacs.

  • Granulated sugar, brown sugar, coconut sugar, monk fruit – any sugar your heart desires will work here. Note: I have only tested this recipe with granulated sugar.
  • Water – you can use an extract in place – like lemon extract, vanilla extract, or even rose water to change the flavor up. I used rose water in my lilac sugar cubes.

How to make them:

With so few steps and ingredients, each step is crucial for success.

  • Start by making lilac sugar. I pick mine from the stem and let them dry a bit before grinding them with the sugar
  • Add lilac blossoms and sugar to a mortar
  • Gently grind with a pestle until the flowers break down and release their oils
  • Get a medium size mixing bowl and add your lilac sugar.
  • Slowly add in your water and mix until sugar is damp and evenly incorporated.
  • Using a spoon, densely pack your sugar into your mold. Use the spoon or your hands to firmly pack them as tight as possible. It will not hold shape unless it’s packed very well.
  • Use a clean brush to brush off the excess sugar from the top of the mold.
  • Let them sit for six hours – overnight to let the sugar harden.

How long will sugar cubes last:

Sugar cubes can be kept indefinitely in an airtight container at room temperature. They are fairly sturdy but do be careful if you’re packaging them to gift, as they are also brittle and can be scuffed or broken.

How long do the sugar cubes need to set before I can use them?

The sugar cubes should be allowed to completely set before being removed from their mold. The time will depend on the humidity and the size of the mold used. To be on the safe side, and for best results – let them set overnight.

Equipment

  • 1 silicone mold any shape, amount of cubes you get will vary based on what mold you use
  • 1 clean brush to dust excess sugar

Ingredients

  • 1 cup sugar (200 grams)
  • 1 tbsp lilac flowers cleaned, removed from stem, organic
  • 1/8 teaspoon water or flavoring extract of choice (rose water, vanilla extract, any flavor you desire)

Instructions

  • First make lilac sugar. There are several ways to do this, for this recipe we ground lilacs into our sugar using a mortar and pestle. You could also do it a slow infusion or in a food processor.
  • In a medium mixing bowl, Slowly add in your water or extract and mix into your lilac sugar until sugar is damp and evenly incorporated. I just spray some organic rose water on ours and it works great.
  • Using a spoon, densely pack your sugar into your mold. Use the spoon or your hands to firmly pack them as tight as possible. It will not hold shape unless it's packed very well.
  • Use a clean brush to brush off the excess sugar from the top of the mold.
  • Let them sit for six hours – overnight to let the sugar harden.
