Our favorite recipe has got to be these lavender shortbread cookies. When I decided to put them on the blog, I was determined to publish the best lavender shortbread cookie on the internet. I did a whole photoshoot with them in miniature picnic baskets and all. There is nothing more satisfying than dipping a perfectly crisp buttery shortbread in your tea, and being blown away by bold botanical flavors that may surprise you.

Lavender lemon rice krispy treats. Light, airy & p Lavender lemon rice krispy treats. Light, airy & perfect for spring 🌼 🌼3 tablespoons butter (43 grams) 🌼1 package 10 oz bag, 1 1/4 cup, (280 grams or about 40 regular sized marshmallows) 🌼6 cups Kellogg’s Rice Krispies cereal (158 grams) 🌼1 tablespoon fresh dried lavender buds 🌼zest of two large lemons 🌼1 tablespoon vanilla extract INSTRUCTIONS 🌼Prepare a 13 x 9 x 2-inch pan by placing parchment paper inside and allowing the sides to hang over the top for easy removal. 🌼In large saucepan melt butter over low heat. Add marshmallows, vanilla extract, lemon zest and lavender and stir until completely melted. Remove from heat. 🌼Add rice krispies cereal. Stir until well incorporated. Using a spatula or parchment paper evenly press mixture into your baking pan. 🌼Allow rice krispy treats to cool for at least an hour in their pan before removing. Cut into rectangles. NOTES 🌸 Best served same day as made Store no more than two days at room temperature in airtight container. 🌸To freeze, place in layers separated by wax paper in airtight container. 🌸Freeze for up to 6 weeks. To thaw, let them sit at room temperature for 15 minutes before serving. I’m baking my regular chocolate chip cookies for my kiddos right now. Off to pick up more eggs & sugar because I’m in a total baking mood.
