Lavender and blueberry honey granola. Our house smelt like freshly baked cookies as the honey caramelized the granola.
Sunday is usually reserved for buttermilk pancakes in our household. And every Sunday morning, my sweet husband makes mine last so that he can add a little bit of lavender into my batter. Read here for our lavender buttermilk pancakes!
Even though it is quite the craze, lavender is still so underrated in baked goods and pancakes. And really... in everything. I admit, I even drink a lavender latte daily.
How to add flavor with lavender
This week I really needed some kitchen therapy and wanted to create some new recipes. I decided I'd try some lavender granola, made from some lavender botanical honey I infused over the holidays. I am SO glad I did!
Can I make this granola recipe vegan?
If you are vegan or do not have lavender infused honey on hand, you can make a lavender simple syrup (see my lavender simple syrup recipe here) You can also swap the butter for coconut oil no problem. Coconut oil is not easy to come by or affordable where I live, so I use butter in my granola these days.
Can I make this recipe gluten free?
Absolutely! Use gluten free oats in your granola and you're good to go!
Just a few simple ingredients are needed to put together this Lavender and blueberry granola recipe. I used
- Oats or gluten free oats
- Butter or coconut oil
- Dried blueberries
- Lavender infused honey or lavender simple syrup
- Sea salt
The recipe for lavender and blueberry honey granola
- Two and a half (500 g) cups of oats
- One cup (227 g) of butter or coconut oil
- ½-1 cup of lavender infused honey or ½ cup lavender simple syrup (depends on your sweet preference)
- 1 teaspoon of sea salt
Preheat oven to 350 degrees F, line a baking sheet with silicone baking matt (preferred) or parchment paper
In a large bowl, add two cups of oats and set aside
Melt your butter
Add in your honey and and salt to your melted butter and mix well
Pour your melted butter + honey over the oats.
Pour the bowl of oats onto your lined baking sheet
Make sure it's distributed evenly amongst the baking sheet and press down so it's compact as possible. I usually take a cutting board, place it over the top, and step on it or press it down as much as I possibly can.
Place in oven and bake for 30 minutes
Once done, turn oven off but keep oats in the oven for another ten minutes.
Remove from oven but do not touch. Leave them for at least a few hours, overnight is best. This allows them to harden and will give you the next large clusters of granola you want.
Once completely cooled, you can lift from baking sheet.
Mix in your dried blueberries if desired.
Store granola in an airtight container at room temperature for up to two weeks.

As soon as I was done photographing this granola, I was so excited to enjoy it with some tea this afternoon. Despite lavender seeming like a "grown up" acquired taste, both of my children really enjoyed this recipe! We enjoyed clusters as we played a memory game this afternoon. And now that we're back to school after a break, having some granola on hand makes snack time a breeze.
