How to make the syrup:

Heat the water, sugar, blueberries, and lavender in a small saucepan over medium-high heat until they come to a simmer.

  • Stir to dissolve the sugar and continue simmering gently for 5 minutes; reduce heat and let simmer on low for an additional 20 minutes to allow the berries to soften.

  • Strain the syrup through a fine mesh strainer, pressing down on the leftover berries to extract as much juice as possible.
  • Remove from heat, let the liquid cool.
  • Pour into a jar with an airtight lid

How to use this syrup:

Use this syrup in your beverages as a sweetener, like a lavender latte or lavender lemonade. It would also be lovely in a blue butterfly pea flower latte! And this combo would be perfect pop of color for a spring cocktail, like a lavender bees knees.

Pour it over lavender pancakes or waffles, or brush it onto a lavender lemon bundt cake for extra flavor. Or drizzle it on some lavender honey ice cream sundae with some fresh blueberries.
