Adding lavender to anything instantly makes it a little more fancy and gourmet. Lavender coffee drinks are popping up everywhere and if you’re anything like me – you simply can not resist treating yourself to floral goodness.
I tried this recipe at home last week, and I haven’t been able to stop drinking it ever since. While I love coffee and it’s the aroma and the ritual of starting our day with a hot cup, I just adore lavender iced coffee all day long.
What is a lavender latte?
in English, a latte refers to the classic Italian drink made with espresso and frothed milk. Traditionally, the espresso is brewed in a stovetop Moka pot and poured into a cut containing warm milk. Outside of Italy, a latte is traditionally served in an 8 oz glass with a single 30 ML or double 60 ML shot of espresso, and a layer of foamed milk (approximately 1/2 inch thick). Iced lattes generally come with more espresso due to being served in a tall glass, and often come sweetened, and in this case – we use a homemade lavender honey syrup to sweeten. And we are serving it over ice.
This beverage will be perfect without ice to as a hot regular lavender latte! But you will want to cut the quantity of espresso and syrup in half. You can keep the same amount of frothed milk.

How to make honey lavender simple syrup for coffee:
Gather your ingredients:
- Fresh or dried lavender – we use this brand
- Raw honey (any honey of choice will do) we love our flower infused honey
- Water
- Sugar
The process:
This 1:1 ratio is so simple, all it requires is 1 cup of water to 1 cup of sugar and ½ cup of fresh lavender. I also add ¼ cup of honey for it’s beautiful ability to balance the floral flavor in this syrup. You will love it! Grab the full recipe here.

Where to find lavender for lavender simple syrup:

If you don’t want to make your own simple syrup, you can surely buy some. I like this brand because it isn’t artificially purple colored like many others. And furthermore, if you don’t want to make or buy simple syrup at all – simply add lavender infused honey for a healthier sweetened iced coffee.
How to make this lavender iced latte:
Start by pouring your desired amount of lavender honey simple syrup into your cup of choice.
Next, add in your ice cubes.
Then, add in your shot of espresso or cup of coffee, cold or hot.
Finally, add in your frothed milk to the top. Use a milk frother (this is the one we use at home) or hand held milk frother to make the perfect latte.
Finally, garnish with some organic lavender if you have it.

Can I add lavender essential oil to make a lavender coffee?
As an aromatherapist, I would not recommend it. For one, even just one drop tastes far too strong in coffee, and two: you get a much better flavor from the syrup and honey.
Can I add flavored espresso to my lavender iced latte?
Of course and in fact that’s a wonderful idea.
How can I serve my lavender iced coffee?
If you want to make it really fancy and special:
- Add some floral iced cubes
- Serve with some candied edible flower petals
- Serve with some lavender marshmallows
