Our best tips for these adorable ghost oreo truffles:

While this recipe is very simple, here are tips for best results!

  • Use the whole oreo.  Do not separate the filling from the oreo cookies.
  • Pulse the oreos into fine crumbs.  Make sure you don’t have any large cookie pieces.
  • If you don’t have a food processor, crush the oreos with a rolling pin.
  • Start with soft cream cheese.  The cream cheese must be super soft before blending with the Oreo crumbs. Make sure it's room temperature.
  • You must freeze the truffles.  If you don’t freeze the balls before dipping, then the melted chocolate will melt the truffles when you dip them.

Lets make them!

The freezer or refrigerator is your friend with this recipe. You want these truffles to be cold when handling them.

  1. Line a baking sheet with wax paper.
  2. Place Oreos in food processor or high-speed blender to blend them into a fine crumb.
  3. In a medium bowl, stir Oreo crumbs and room-temperature cream cheese until well blended and the mixture forms a dough-like consistency. If it's too wet, simply add more Oreo crumbs. It will be soft. Roll the dough in the palms of your hands to form small truffles the best you can. Don't worry about getting perfect round truffles, they are supposed to be a bit wonky and fun.
  4. Stick your candy stick or straw into their center and place them on the wax paper.
  5. Move them to the freezer for an hour or until they are stiff and easy to manage.
  6. Once frozen, feel free to reshape the truffles; they will be easier to manage now.
  7. Add some coconut or vegetable oil to white chocolate and melt.
  8. Dip your cold Oreo truffles into the melted white chocolate and then place them back on the wax paper.
  9. Move them to the fridge to get cold and solid before making your eyes.
  10. To make your eyes, you can use melted chocolate chips, edible markers, icing, chocolate chips, store-bought googly eye sprinkles or anything that's edible and looks like eyes. We melted ⅓ cup of chocolate chips with some oil, dabbed a candy stick into the chocolate, and painted on the eyes and mouth.
  11. Keep them in the refrigerator until you plan to serve them.

Frequently asked questions:

Do these oreo truffles need to be refrigerated?

Yes, these truffles need to be refrigerated. If you leave them on the counter, the chocolate will get soft. You want to make sure they are chilled until ready to serve. They also contain cream cheese which can spoil. According to the FDA, cream cheese should not be left out longer than 2 hours.

How to store them:

Store these truffles in an airtight container in the refrigerator for up to 3 weeks.

Can I freeze these truffles:

To freeze, don't add the straw for easier storage. Line the truffles on a baking sheet so they are not touching and freeze in the freezer for one hour or until they are hard; this will prevent them from sticking together.  Transfer to a freezer-safe airtight container.  Freeze for up to 2 months. Thaw in the refrigerator overnight before serving.
