I tried this recipe at home last week, and I haven’t been able to stop drinking it ever since. While I love coffee and it’s the aroma and the ritual of starting our day with a hot cup, I just adore lavender iced coffee all day long.
To make lavender iced coffee, I use lavender simple syrup, strong fresh brewed coffee, and rich cream. You can use any creamer of choice! You can absolutely substitute lavender simple syrup for lavender honey if desired.
How to make lavender simple syrup for coffee:
Gather your ingredients:
- Fresh or dried lavender
- Raw honey (any honey of choice will do) we love our flower infused honey
- Water
- Sugar
The process:
This 1:1 ratio is so simple, all it requires is 1 cup of water to 1 cup of sugar and ½ cup of fresh lavender. Although it’s not necessary, I use ? cup when it’s dried lavender. I also add ¼ cup of honey for it’s beautiful ability to balance the floral flavor in this syrup. You will love it! Grab the full recipe here.

If you don’t want to make your own simple syrup, you can surely buy some. I like this brand because it isn’t artificially purple colored like many others. And furthermore, if you don’t want to make or buy simple syrup at all – simply add lavender infused honey for a healthier sweetened iced coffee. When making iced coffee, I simply brew a strong pot (8 cups) of coffee and pour it into a pitcher. I then add my lavender syrup and cream and mix well. Then I let it cool in the fridge before enjoying, and serve it over ice! So simple! And can be enjoyed right in the comfort of your garden.

Can I add lavender essential oil to make a lavender coffee?
As an aromatherapist, I would not recommend it. For one, even just one drop tastes far too strong in coffee, and two: you get a much better flavor from the syrup and honey.

How can I serve my lavender iced coffee?
If you want to make it really fancy and special:
- Add some floral iced cubes

Ingredients
- 8 cups brewed coffee
- 1 cup milk or cream of choice
- 1 cup lavender infused honey
Instructions
- Brew a pot (8 cups) of coffee, stronger than you would if you were to brew it for a hot cup.
- After brewing, pour into a glass or pitcher once it has cooled slightly.
- Pour in your honey or other sweetener to dissolve (it will dissolve evenly in heated coffee)
- Add your milk or cream.
- Cover and let chill in fridge.
- Serve over ice.
