Watermelon mint rosewater popsicles

Watermelon is one of the best parts of summer, am I right? Juicy, hydrating watermelon is so perfect on it's own. But, when you add it with kiwi and mint - you have the most adorable pops that look like little watermelons - which are basically fruit salad on a popsicle stick.

why I made it:

Watermelon is usually consumed quickly in our house. But have you ever found yourself with half a watermelon and no dish large enough to store it? The other night I bought a whole watermelon and found myself with no containers large enough to store it all. So I decided I better make some watermelon juice in the blender. And if you're gonna make watermelon juice, why not make some popsicles too!

What you'll need:

  • A blender or food processor to blend ingredients into a puree
  • A popsicle mold (linking my favorites we use at home below)
  • Popsicle sticks

Ingredients in Watermelon kiwi mint popsicles:

  • About ½ regular sized watermelon - seedless or seeds removed, or about 3 cups
  • 2 kiwi fruits
  • 1 tablespoon rose water
  • 1 small bundle of fresh mint or 1 tablespoon of dried mint
  • 1 tsp honey, or more - if desired

Where to find rosewater:

You can easily make rosewater at home if you have access to organic roses. You can find it in most grocery stores, and if you have trouble finding it there you can easily buy it from amazon. You can also look for it in pharmacies and halal or Middle Eastern markets. Be sure that it's 100 percent pure, safe for consumption and not for cosmetic purposes only.

Step by step how to make these popsicles:

  • Cut flesh of watermelon into large chunks. Add watermelon, rosewater and honey into a blender and process until smooth. Pour puree into your popsicle mold. Add your popsicle sticks into the mold. Be sure to leave room for green mixture. Let freeze for one hour before adding green mixture.
  • Peel kiwi and cut into small pieces. Add to a blender along with your mint. Blend to puree until smooth. If needed, strain to remove any large pieces of whole fresh mint. Pour puree into popsicle molds, on top of the watermelon.
  • Freeze until the popsicles are solid, 4 hours or more.

Ingredients

Notes

Feel free to make these popsicles well in advance of the date you need them by! They last up to six months in the freezer.
To remove from the mold with ease, run under hot water for just a few seconds.
